Courgette Cake with Poppy Seeds and Lemon (Vegan)


Here is my new recipe for a vegan courgette cake. It is fluffy and moist and a nice cake for coffee.



Ingredients: (for a 22 cm pan)

  • 250 g whole wheat flour
  • 100 g oats
  • 200 g cane sugar
  • 1 tablespoon starch
  • 1 sachet (15 g) baking powder
  • 100 g grounded almonds
  • 260 g grated courgette (2 small ones)
  • 40 g poppy seeds
  • 150 g vegan cream
  • 150 g canola oil
  • 100 g soy milk
  • peel of 1 lemon + a squeeze of lemon juice
  • vanilla
  • icing sugar + lemon juice for the decoration

First, roast the poppy seeds in a pan without fat and in low heat until they start to smell. Batter the cake pan

Then, mix all the dry ingredients in a bowl. Add the liquid ingredients and mix everything together. Fill the dough in the cake pan and bake in the preheated oven in 200°C for 50 minutes (eventually cover with tin foil after 30-40 minutes to prevent the cake from getting too dark). Let it cool down and decorate with the lemon icing. Enjoy!♥
