Spinach-Pea Soup with Buttermilk and Mint


this soup is fresh and light and perfect for a hot summer day! It is low in carbs and fat as well and fast to make.


Ingredients (for around 3 portions):

  • 150 ml vegetable broth
  • 300g peas (I used frozen)
  • 200g spinach (I used frozen)
  • 5 branches of mint
  • 300 ml buttermilk
  • salt and pepper

Defrost peas and spinach (in a pot) and shorty heat them. Separate mint leaves from branches and add them together with the rest and blend everything together. If you prefer the soup a bit creamier, you can use cream instead of buttermilk. I decorated the soup with some drops of buttermilk and by crossing them with a skewer I got the heart shape 😉 Enjoy! ♥
