Poppy Filling (for Cakes, Braids..)

Here is a basic recipe to prepare a poppy filling for any pastries or cakes. The amount suits about one cake or one braid…

  • 150 g freshly grounded poppy seeds
  • 240 g milk
  • 30 g sugar
  • 30 g honey
  • 30 g butter
  • 30 g soft wheat semolina
  • 1 egg
  • a pinch of salt
  • vanilla extract
  • 2 tablespoons of rum or amaretto

Mix poppy seeds, milk, sugar, honey, butter and wheat semolina and heat in a medium heat while stirring until the mass starts boiling (when it starts to build bubbles). Let it cool down until about 60 degrees (that is when you can test it with your finger without burning). Stir in the egg and shortly heat again. Take pot from the stove and add vanilla and rum/amaretto and let it cool down while stirring. The mass should have a creamy consistence. Enjoy ♥
