Courgette-Noodles with Salmon in a Creamy Sauce


Since I purchased a vegetable-noodle maker, this is my first recipe for it.



First some infos about the spiral cutter:

I bought the cutter from the brand uvistar, a small and cheap cutter which is easy to use, handy and fast to clean! I can really recommend it if you don’t want to spend a lot of money on a professional cutter. It works perfectly with courgettes! This is how it looks like

This recipe for courgette pasta is really fast and tasty, perfect for a lunch if you don’t have much time for cooking but also tasty enough to serve to guests 🙂

Ingredients: (for one portion)

  • 1 courgette
  • 4 spring onions
  • 4 black olives
  • 30 g cream cheese
  • some rocket leaves
  • 1 squeeze of lemon juice (a bit less than half a lemon)
  • 1/2 smoked salmon fillet
  • dill
  • salt+pepper
  • 10 g almond slices
  • parmesan cheese

First spiral the courgette with the spiral cutter and cut the spring onions in small rolls. Slice olives. Heat in a pan with 1 tablespoon of olive oil. Add cream cheese, salt, pepper, dill, lemon juice rocket salad and olives and fry for 4-5 minutes. Add the smoked salmon and serve it with sliced almonds and parmesan cheese. Enjoy! ♥
