Healhy and Chewy Oat-Pumpkinseed Cookies (No Sugar, No Flour)

Here is the recipe for my newest creation: Soft and chewy cookies which don’t taste like they are healthy. For me they just had the perfect consistence. They would also make a good breakfast or a nice option for sweets.

Ingredients:

  • 45 g oats/müsli
  • 45 g oat bran
  • 30 g grounded pumpkin seeds
  • 1 ripe banana
  • 1 tablespoon organic peanut butter
  • 80 g quark (I used skyr)
  • 2 teaspoons of cinnamon
  • 1 teaspoon baking soda
  • around 20 drops of liquid stevia (depending of how sweet you want the cookies to be)
  • 15 g pumpkin seeds
  • 20 g dried cranberries
  • some chocolate chips if you like (I added around a hand full)

Smash the banana and mix together all the ingredients until the dough is well combined. The dough is going to be really sticky .Form cookies (mine had a diameter of around 5 cm) and place them on a baking sheet.You might find it a bit hard to form the cookies as the dough is not really firm, you can also  use a tablespoon to put the mass onto the baking sheet Bake in the preheated oven for 15-20 minutes in 180° C. Let them cool down (they will get a bit firmer).
