Cashew Cookies with Amaretto-Icing

Here a Christmas recipe which I especially like for cut-out cookies as they don’t lose their form and have the perfect crunchy and delicate consistence with a subtle taste of amaretto.


for the cookie dough:

  • 220 g flour
  •  80 g cashew nuts
  • 100 g sugar
  • 1/2 sachet vanilla sugar
  • 140 g butter
  • 1 egg
  • pinch of salt

for the icing:

  • 100 g icing sugar
  • amaretto (liquor)

Ground the cashew nuts (I used a hand blender). Mix them with flour, sugar, vanilla sugar and salt. Add the butter in little pieces and mix first using a dough hook and later your hands until you have a smooth dough. Form the dough into a ball, wrap it in cling film and place it in the fridge for around 2 hours. Spread some flour, roll the dough and cut out the cookies. It helps dipping the cookie cutters in flour before cutting to get them off the cutters more easy. Place the cookies on a baking sheet covered with baking paper and bake in the preheated oven in 170°C (air circulation 150°C). Take them out just before they start to get brown and let them cool down completely.

For the icing, mix icing sugar with amaretto until the icing is neither too liquid nor too firm to spread (add just small amounts of amaretto as the mass changes really fast with the liquid!). With a pastry brush, spread the icing on the cookies and place them on a plate to dry. Enjoy! ♥
