Chickpea Salad with Feta, Sun-Dried Tomatoes and Parsley

Hej! Here is the recipe for a fresh salad which is fast to make and also a good salad to take to a party or a BBQ!



  • 250g chickpeas (=drained net weight of a small can)
  • 200g of sun-dried tomatoes (I used the one’s which are really dry for this recipe, not the preserved oily ones but you can also use these ones or just semi-dry sun-dried tomatoes)
  • half bunch of fresh parsley
  • 150g feta cheese
  • half onion
  • 1 garlic clove
  • juice of 1 lemon
  • 2 Spoons of olive oil
  • salt+ pepper


Wash and dry the parsley. Chop it into small pieces. Wash the chickpeas and let them drain. Cut the sun-dried tomatoes and the feta into small pieces. Chop the onion into small pieces and cut the garlic in a garlic press. Mix all together in a salad bowl. For the dressing, mix olive oil, lemon juice, salt, pepper and add to the bowl. Mix well.
