Stir-fried Chanterelles with Smoked Tofu and Black Rice


Here is my recipe for a hearty veggie meal with a combination of chanterelles, smoked tofu, carrot and onion. This is the first time i cooked with black rice (my mum brought a package last time she visited me). I never heard of it before but it turned out to have a lot of benefits, compared to other rice plus it belongs to the group of wholegrain rice sorts! It also contains a lot of trace elements and minerals (especially iron!) and it is also antioxidant. It can be prepared just like normal rice. Once it was cooking, it started to spread a really delicious nutty smell which I also rediscovered in the taste so all in all it is a really good and healthy product!


Ingredients (for 2-3 portions):IMG_20160829_150714_716

  • 150g black rice
  • 200g fresh chanterelles
  • 175g smoked tofu
  • 2 carrots
  • 2 onions
  • 1 clove of garlic
  • 150g fresh sour cream,beaten (I used it because with only 10% fat it is less heavy than normal cream but you can also use another kind of cream like for example craime fraiche)
  • olive oil
  • herb salt
  • pepper
  • (dried) garden herbs


Place rice in boiling water and boil for around 30 minutes.

Heat olive oil in a pan, cut onions and clove into small pieces and fry them. When they turn golden, add sliced carrots and chanterelles and fry for around 10 minutes. Add tofu cut in cubes, cream and spices and leave it in the pan for another 3 minutes. Serve with black rice. Enjoy! ♥
