Vegan Moscow Mule Cake

Hej! This time I made a cake for a Dada-Party I was invited to, so I wanted to try out something new and unusual. I got my inspiration in my favourite cocktail at the moment, the “moscow mule” and tried to catch its sweet spiciness in this cake. The cake turned out really moist and really reminds me of the taste of this cocktail, but also people who didn’t know the cocktail liked it and described it as ´different but tasty`.  And it does really well without any eggs or butter! To make the dough thicken (which is usually happening with the eggs) I used starch mixed with water. Apple sauce makes the cake more luscious and the taste will boil away. I decided to make a moscow-mule-sirup to intensify the taste of the cake, as I was afraid that the aroma would get lost a bit while baking (especially of the vodka). Here my recipe…



Ingredients (for a 22 cm baking pan):

  • 7 TS starch +9 TS water
  • 75g apple sauce
  • 100g brown sugar +80g white sugar
  • 170ml ginger ale or ginger beer
  • 40ml lime juice (around 1 lime)
  • 50ml vodka
  • 240ml vegetable oil (I used sunflower oil)
  • 360g flour
  • 1,5 sachets of baking powder
  • 40g candied ginger
  • sliced cucumber, lime slices and candied ginger for decoration

For the sirup:

  • 80g sugar
  • 40ml water and ginger ale
  • 50g sliced ginger
  • juice from 1,5 limes
  • 1-2 shots of vodka

Mix starch and water. Mix it together with the sugar and the apple sauce for around 5 minutes until it becomes lightly foamy. Mix all the liquid ingredients together and add to the sugar mix until the mass becomes well combined. Mix flour and baking powder and add it to the liquid mass. Dice the ginger into small pieces and fold in the dough. Fill the dough into an oiled cake pan and bake in the preheated oven in 180°C for around 50 minutes. I always cover the cake pan with a kitchen towel in the oven, this will prevent it from growing unequally and it will come out nice and flat. Do the skewer test to check if the cake is ready (if no dough gets stick to the skewer, it means that it is ready…).

Take the cake out of the oven.

While the cake is still in the oven, you can prepare the sirup. Therefore, dissolve the sugar in the water and let it come to boil, until the sugar is completely dissolved. Now, add the sliced ginger and the lime juice and let simmer for around 30 minutes. Let it cool down and pour it through a sieve to separate from the ginger pieces. Add the vodka.


You can now use a skewer to pinch wholes into the cake so that the sirup gets soaked up into the cake. I didn’t use all the sirup, you can use a few tablespoons and keep the rest (it also tastes really good for cocktails!).

Decorate the cake with cucumber slices (just like the real cocktail, just that I didn’t want to add cucumber INTO the cake), lime slices and diced candied ginger. On the photos I forgot the ginger, but I added it later. Enjoy! 🙂 ♥
