Broccoli-Carrot Salad with Couscous and Curry Dressing (Low Carb)


Another recipe for a light lunch which is low in fat and carbs and really healthy!

Ingredients (for around 2-3 portions):

  • 1 broccoli
  • 2 carrots
  • 1 handful of sunflower seeds
  • 50g couscous
  • 1 red onion
  • 3 tablespoons of olive oil
  • 3 tablespoons of apple cider vinegar
  • 2 teaspoons of curry powder
  • 1 teaspoon of  honey
  • a bit of grounded chili
  • 1 teaspoon of vegetable stock
  • salt and pepper


Cook the broccoli florets and the sliced carrot (separately) until firm to the bite (around 5 minutes). Cut the broccoli in smaller pieces. Cut the onion into small pieces. Prepare the couscous by adding the same amount of water and a teaspoon of vegetable stock and let it rest for around 10 minutes. Stir from time to time to loosen the couscous. Roast the sunflower seeds in a pan until slightly golden.

For the dressing mix oil, vinegar, honey and spices. Mix everything in a bowl. Enjoy! ♥
